Apple and Blueberry Squares

A tray bake with a buttery batter, lemon zest, grated green apple and 300 g of blueberries, which are what you taste in every bite. Easy to cut and to carry, ideal for tea, for school or for the office.

The grated apple is not decoration but technique: it brings the moisture that keeps the cake soft for days — which is why it goes in grated and not diced, so it spreads evenly through the batter. Well wrapped it keeps several days and cuts cleanly into squares.

  • 150 g butter
  • 150 g powdered sugar (icing sugar)
  • 3 eggs
  • Zest of 1 lemon
  • 1 green apple, grated
  • 250 g all-purpose flour (plain flour)
  • 10 g baking powder
  • 300 g blueberries

Method

    Beat the butter with the icing sugar, then add the eggs and the lemon zest.

    Sift the flour and the baking powder together over the top and fold in. Add the grated apple and the blueberries and fold only briefly, so the berries are not crushed.

    Spread the batter on a buttered tray and bake at 180 °C for about 40 minutes. Let it cool completely and then cut it into squares — cut warm, they fall apart.
