Halloween Eyeball Ice Cubes

Each glass holds three ice spheres with the blueberry right at the surface, in a pale drink with a striped straw. Around them, blueberries, a green apple, a pear and a carved pumpkin.
Round ice balls with a blueberry inside for a pupil: floating in a glass they look like eyeballs, and they are the easiest way to dress up a Halloween drinks table. They are made in a silicone sphere ice mold, the kind you fill through a hole at the top. The blueberry floats and ends up right against the surface of the ice, in plain view. They take 10 minutes of work and at least 4 hours in the freezer, and they show best in pale, clear drinks such as apple- or pear-flavored water.
Ingredients
- 6 large fresh blueberries
- Filtered water, or boiled and cooled water (about 300 ml)
- Apple- or pear-flavored water, to serve

Open a silicone sphere ice mold, the kind with a fill hole at the top, and put a blueberry in each half.

Close the mold firmly, making sure the halves lock together, and fill each cavity with water through the hole. The blueberry rises and rests against the top: that is what puts the pupil at the surface of the ice.

Set the mold on a level surface in the freezer for at least 4 hours, or overnight, until the spheres are frozen solid.

Open the mold carefully and serve the eyeballs right away, in glasses or in a pitcher of a pale drink.
