Île Flottante from the Microwave

The île flottante in an express version: meringue that rises and sets in the microwave in under a minute. Three ingredients, a whisk and not even 5 minutes of work.
The result is surprising: the mixture grows in the bowl to several times its volume and comes out with a cloud-like, very light texture. No more than 40 seconds — beyond that the meringue dries out and turns rubbery instead of airy.
The drops of lemon juice are not optional: the acid stabilises the egg white and holds the meringue up while it heats.
Ingredients
- 3 egg whites
- 6 tbsp sugar
- A few drops of lemon juice
Method

Whip the egg whites with the sugar and the lemon to a firm, glossy meringue.

Put it into a clean glass bowl, filling it only halfway: the mixture grows enormously.

Microwave for 30 to 40 seconds at full power, until it rises and sets. Take it out at once: any longer dries it out and makes it rubbery.
