Mestizo Mbejú with Fried Eggs

Cassava and corn tortillas with cheese, made in a skillet (frying pan) and served with fried eggs.
Ingredients
- 300 g of cassava starch
- 400 g of Paraguayan corn flour
- 150 g of beef fat, plus extra as needed for cooking
- 200 g of grated semi-hard cheese (pategrás and provolone)
- 200 ml of hot water
- 1 tablespoon of coarse salt
- 12 eggs

Dissolve the salt in the hot water.

Soften the fat with your hands until it has a soft, creamy consistency, without melting it over heat or in the microwave.

Rub with the starch until crumbs form. Gradually incorporate the corn flour and all the brine, crumbling the mixture. Obtain a damp sandy texture, without forming a dough ball. Mix in the cheese.

Heat a thick non-stick skillet (frying pan) and grease it. Distribute a 1 cm layer; tuck the edges inward and compact gently.

Cook until it releases from the skillet and rotate gently to brown evenly. When the base is golden, flip with the help of a plate and brown the other side. Repeat in batches.

Fry the eggs with fat until the whites set. Serve the mbejú hot with two eggs per person.
