Brigadeiros – Brazilian Chocolate Truffles
Classic brigadeiros: the Brazilian truffles made from condensed milk, cocoa and butter that went on to conquer the world. Creamy inside, rolled in chocolate sprinkles — three ingredients and 20 minutes at the stove. The secret is the moment: here is how to recognise it, so they come out perfect and do not collapse as you roll them.

Ingredients
- 1 tin of sweetened condensed milk (395 g)
- 3 heaping tbsp cocoa powder (unsweetened, ideally)
- 1 tbsp butter (plus extra for your hands)
- Chocolate sprinkles, as needed, for rolling
- Small paper cases, to serve (optional)
Method

Put the condensed milk, the sifted cocoa and the butter into a heavy-based pan.

Cook over low heat for about 15 minutes, stirring constantly with a spatula — really without stopping. The right moment: when you tilt the pan, the mixture lifts away from the base in one piece and takes a beat to settle back.

Tip it out onto a buttered plate and let it cool completely, at room temperature or in the fridge.

With lightly buttered hands, take portions and roll brigadeiros the size of a walnut.

Roll them in the chocolate sprinkles and set them in paper cases. In a closed container at room temperature they keep for 3 days — though they never last that long.
